Soils and vines

Vineyards are located at an altitude of 850m above sea level on a hillside with slopes. Ecological Viticulture. Poor, sandy loam soil with lots of pebbles. 15 to 40 year old vines. Low yield of 1kg per vine or 7HL per Hectare.

85% Bobal - 9% Cabernet - 6% Merlot

Vintage and climate

Winter cold and wet. Spring rainy. Summer dry and hot with significant contrast in temperature between day and night.


Selection of the grapes in the vineyard during harvest in crates of 15kg. The grapes are cooled to 4C for 24 hours. Fermentation in stainless stall tanks of 3.000L and 1.000L wooden casks. The cap is vert gently submerged by hand during fermentation. Total period of fermentation and maceration is 21 to 30 days. Only free run wine is used. Barrel aging for 12 months in carefully selected French oak barrels of 225L (15% new and 35% second and third year) and 50% in barrels of 1.000L.
